Pumpkin Soup Recipe

Ingredients
  • 2 cups of pumpkin puree
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • ½ cup of heavy cream (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until they're soft and translucent.
  2. Add the pumpkin puree and vegetable broth. Stir well.
  3. Simmer for 15-20 minutes.
  4. Use a blender to puree the soup until smooth.
  5. Stir in the heavy cream (if using), pumpkin spice, salt, and pepper.
  6. Heat the soup for a few more minutes, then serve hot.

  7. Roasted Pumpkin Seeds

    Ingredients Pumpkin seeds (Don’t buy grocery store pumpkin seeds! Reduce your food waste and use seeds from you freshly carved pumpkin), olive oil and salt

    Instructions

    1. Preheat your oven to 300°F (150°C).
    2. Clean the pumpkin seeds, removing any remaining pumpkin flesh.
    3. Toss the seeds with a bit of olive oil and salt to taste.
    4. Spread the seeds in a single layer on a baking sheet.
    5. Roast for about 30-45 minutes or until they are crispy and golden brown. Stir them occasionally for even roasting.

    Ingredients
    • 1 cup of pumpkin puree
    • 1 1/2 cups of all-purpose flour
    • 2 tbsp of sugar
    • 2 tsp of baking powder
    • 1/2 tsp of cinnamon
    • 1/2 tsp of nutmeg
    • 1/4 tsp of salt
    • 1 cup of milk
    • 1 egg
    • 2 tbsp of melted butter

    Instructions
    1. In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
    2. In another bowl, whisk together the pumpkin puree, milk, egg, and melted butter.
    3. Pour the wet ingredients into the dry ingredients and stir until just combined.
    4. Heat a skillet or griddle over medium heat and grease it lightly with butter or oil.
    5. Pour 1/4 cup portions of the pancake batter onto the skillet and cook until bubbles form on the surface. Flip and cook until golden brown.
    6. Serve the pancakes with maple syrup and a dollop of whipped cream if desired.
